Peel and divine shrimp then place in a bowl. Add the 3 1/2 oz. Hemp oil, 1/2 the ginger, zest of lime, juice from one lime, finely chopped chives, cilantro and garlic to shrimp. Toss the shrimp and make sure all the shrimp are covered, let stand for about 10 minutes. Make the salsa. Finely chop red onion, peel and chop mango, red pepper, add the rest of the ginger then finely chopped mint leaves, cilantro and the chili pepper and the juice from the other lime, 1 oz. Hemp oil. Mix together well and set aside. Coarsely chop some of the cilantro and mint leaves, place on a plate. Thinly slice the cucumber, then cut each end opposite, one cut on top other at bottom, not all the way through, only about 1/2 inch and place two ends together if big enough or use two pieces. Grill shrimp, when finished remove and plate. Put the salsa into the cucumber. Drizzle with hemp oil and serve. Back to Recipe |
