Marinated Chicken Satays Salad

Ingredients:

2 boneless chicken breast skin removed
1 red pepper
1 garlic clove
2 oz. of hulled hemp seeds
1 oz. toasted hemp seeds
4 oz. Hemp Oil
1 mango
1/4 English cucumber
2 oz. cashews or other nuts
2 oz. honey
1 1/2 oz. lemon juice
mixed lettuce
fresh basil leaves
salt and pepper
wooden skewers

Directions:

Roast peppers, remove skin and seeds, cut and place in food processor, add hulled seeds, 1 1/2 oz. hemp oil, garlic clove, blend to paste consistency. Cut chicken into strips, add paste and mix well. Set aside for approx. 20 minutes. Soak skewers for about 15 minutes if cooking in oven and about 30 minutes if doing on barbecue. Place chicken on skewers. Toast cashews, set aside. Cut cucumber into thin strips, set aside. ( if desired, brush with sesame oil or hemp oil). Place chopped fresh basil into a bowl (reserve a few leaves for garnishing), add 2 oz. hemp oil, 1 oz. lemon juice, 1/2 tsp. honey and salt and pepper. Mix together an set aside. Grill or bake chicken for approx. 8-10 minutes. Mix remaining honey, lemon juice and hemp oil, drizzle over chicken while cooking to glaze it. Place lettuce on plate, peel and slice mango and cucumber and place around on lettuce, then sprinkle with toasted cashews. Remove chicken from grill or oven and place on top of salad, drizzle with basil dressing and serve.
